Natas Vegen e Cruas ou Creme de Leite Vegen e Cru - Staple Receita: Raw Vegan Sour Cream - Addictes to Veggies

Porque é que esta receita considerada um grampo?
Bem, para começar, é uma base fantástica para uma tonelada de mergulhos maravilhosos em molhos que você vai estar vendo em um futuro próximo, e eu tenho certeza que ele vai encontrar seu caminho tambem para algumas receitas de sopa. Ela também passa a ser algo que eu estou muito orgulhosa porque é versátil. Esta linda "Natas de Caju " pode ser usado em praticamente tudo - incluindo doces! Voltarei amanhã com uma receita simples para um mergulho Dill muito saborosa usando este creme fantástico ...
Mas, primeiro, você precisa começar por aqui:
Viciada em Natas Vegetais ou Creme de Leite Vegetal
Os rendimentos totais 2,5 chávenas
Passo 1.
Caju e imersão
Mergulhe 1 e 3/4 chávena * de Cajus seco durante a noite (cerca de 6 a 8 horas)
* Sempre que você mergulha o Caju eles vão expandir em tamanho devido à água .
* Após os cajus já estarem encharcados eles vão render cerca de 2 chávenas.
Escorra os cajus da água de maceração e continuar a fazer o creme de leite.

Passo 2.
Fazendo a base das Natas Vegetais ou Creme de Leite Vegetal
Em seu processador de alimentos combinar o seguinte:
2 chávenas de  Caju
2 colheres de sopa mais 1 colher de chá de vinagre de maçã não filtrado
1/2 colher de chá de sal
Bata todos os itens acima por 2 minutos até obter uma pasta grossa e oleosa
Raspe o fundo e os lados de seu processador de alimentos como um pouco da mistura de caju pode começar a colar.
Deixe tudo em seu processador de alimentos e passar para a próxima etapa.
Etapa 3.
Finalizando as Natas Vegetais ou Creme de Leite Vegetal
Preste atenção especial para as seguintes direções de água e medições - o que irá garantir que você obtenha a melhor qualidade e consistência.
Esta receita pede:
1 e 1/4 de chávena de água total
Tenha sua água medida e siga atentamente as instruções abaixo.
Enquanto o seu processador de alimentos esta "On/ligado" proceder à operação em:
1/4 de xícara de água
Bata por 1 minuto
Prossiga para adicionar o resto de sua água em incrementos de 1/4 xícara
Deixe o seu purê de processador por 30 segundos entre cada 1/4 de xícara de água adicionada
Isto significa que você estará adicionando 1/4 de xícara de água 5 vezes até que você tenha adicionado ao total 1 e 1/4 de xícara de água que a receita pede.
O produto final terá uma consistência bastante fina, e vai precisar de tempo para repousar. Deixe no seu frigorifico por pelo menos uma hora.
Após as Natas Vegetais ou Creme de Leite Vegetal ter refrigerado estará mais grossa  e na consistência perfeita.
Guarde suas Natas Vegetais ou Creme de Leite Vegetal num recipiente hermético e vai durar por até três semanas no seu frigorífico. Você também pode dividi-lo em pequenos lotes e vai manter por até três meses em seu freezer.

AtV Staple Recipe: Raw Vegan Sour Cream

Why is this recipe considered a staple? 
Well, for starters it's an amazing base for a TON of wonderful dips and sauces you'll be seeing in the near future, and I'm pretty sure it'll find it's way into some soup recipes too. It also happens to be something I'm SO very proud of because it's versatile. This lovely Cashew "Sour Cream" can be used in just about everything - including sweets! I'll return tomorrow with a simple recipe for  a very tasty Dill Dip using this fantastic cream...
 But first, you'll need to start here:
Addicted to Veggies Sour Cream
Yields 2.5 cups total
Step 1.
Cashews and Soaking
Soak 1 and 3/4 cups *dry Cashews overnight (roughly 6 to 8 hours)
*Anytime you soak Cashews they will expand in size due to the water they retain.
*After the Cashews have soaked they will amount to roughly 2 cups.
Drain the Cashews from the soaking water and proceed to make your Sour Cream.
Step 2.
Making the Sour Cream base
Into your Food Processor combine the following:
2 c Cashews
2 Tbsp plus 1 tsp Unfiltered Apple Cider Vinegar
1/2 tsp Salt
Puree all of the above for 2 minutes until you have a thick and oily paste
Scrape the bottom and sides of your food processor as some of the Cashew mixture may begin to collect.
Leave everything in your food processor and move on to the next step.
Step 3.
Finishing the Sour Cream
Pay special attention to the following Water directions and measurements – this will ensure that you get the best quality and consistency.
This recipe calls for:
1 and 1/4 cup Water Total
Have your water measured out and carefully follow the directions below.
While your food processor is “On” proceed to stream in:
1/4 cup of water
Puree for 1 minute
Proceed to add the rest of your water in 1/4 cup increments
Let your processor puree for 30 seconds in between EACH 1/4 cup of water added
This means you will be adding 1/4 cup of water 5 times until you have added the total 1 and 1/4 cup of water that the recipe calls for.
Your finished product will be a fairly thin consistency, and it will need time to chill and set in the fridge for at least an hour.
After your Sour Cream has chilled it will have thickened into the perfect consistency.
Store Sour Cream in an air tight container and it will last for up to three weeks in your fridge. You can also divide it in small batches and it will keep for up to three months in your freezer.
